  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup white chocolate, melted and cooled
  • 2–3 tbsp milk
  • Fresh raspberries
  • White chocolate curls or shavings
  • Mint leaves

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and flouring them.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla and melted white chocolate.
  4. Alternately mix dry ingredients with milk into the batter until just combined.
  5. Divide batter between pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool cakes before removing from pans.
  6. For the filling, cook raspberries with sugar and lemon juice until they break down; thicken with cornstarch slurry.
  7. Beat butter for frosting until creamy; gradually mix in powdered sugar, melted white chocolate, vanilla extract, and enough milk to reach desired consistency.
  8. Assemble the cake by layering frosting and raspberry filling between each layer before frosting the outside.
