  • 5 cloves garlic
  • 1 medium rutabaga (or turnips)
  • 4 large potatoes
  • ¼ head green cabbage
  • 9 oz vegan beef (or portobello mushrooms)
  • 4 cups vegetable stock
  • Soy sauce
  • Salt
  • Pepper
  • Bay leaves
  • Thyme
  • Rosemary

Instructions

  1. In a large pot over high heat, add oil and sear your choice of protein until golden brown. Remove and set aside.
  2. Reduce heat to medium; sauté onion, carrots, and celery until softened. Add minced garlic briefly before sprinkling in flour.
  3. Gradually pour in non-alcoholic stout while stirring to form a gravy.
  4. Add all remaining vegetables and seasonings; stir well.
  5. Bring to a boil, then lower heat to simmer uncovered for about 45-50 minutes until potatoes are tender.
  6. Return seared protein to the pot for the last ten minutes of cooking.
