  • 3 large red apples
  • 1 3/4 cups apple juice
  • 2 tablespoons apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste (or extract)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt

Instructions

  1. Core and chop apples into large chunks. Combine them in a large pot with apple juice and apple cider vinegar. Bring to a boil then reduce heat to simmer for about 30 minutes.
  2. Once apples are soft, add brown sugar, vanilla bean paste (or extract), cinnamon, nutmeg, cloves, and salt. Stir well.
  3. Blend the mixture until smooth using an immersion blender or standard blender.
  4. Return the blended mixture to the pot and cook uncovered over medium heat for another 30-45 minutes until thickened, stirring occasionally.
  5. Enjoy warm or allow to cool before storing in jars.
