  • 3 medium bell peppers (red, yellow, or green)
  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup canned tomato sauce
  • 1 cup cooked rice (brown or white)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil, diced onions, and minced garlic; sauté until fragrant (about 5 minutes).
  3. Add ground beef or turkey; cook until browned (7-10 minutes), breaking apart as it cooks.
  4. Stir in tomato sauce, cooked rice, and Italian seasoning; combine well.
  5. Halve each bell pepper lengthwise and remove seeds; place cut-side up in a greased baking dish.
  6. Fill each pepper half with the meat-rice mixture; top with shredded cheese.
  7. Bake for 25-30 minutes until peppers are tender and cheese is melted.
