  • 1 ¾ cups beef broth
  • 28 oz fire roasted crushed tomatoes
  • 15 oz red kidney beans (drained and rinsed)
  • 15 oz pinto beans (rinsed and drained)
  • 1 medium yellow onion (chopped)
  • 1 tablespoon olive oil
  • 1 ½ teaspoons garlic (minced)
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Warm olive oil in a large pot over medium-high heat.
  2. Sauté chopped onion for about 2 minutes until softened.
  3. Add ground beef; cook until browned, breaking it up as it cooks (about 5 minutes). Drain excess fat.
  4. Stir in minced garlic and cook for 30 seconds. Add chili powder, cumin, brown sugar, oregano, salt, pepper, and tomato paste; mix well.
  5. Pour in beef broth and stir to combine while scraping any bits from the bottom of the pot.
  6. Add crushed tomatoes along with kidney and pinto beans; bring to a gentle boil.
  7. Lower heat and simmer for 1-2 hours, stirring occasionally. Uncover during the last 30 minutes to thicken.
