  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 teaspoon Dijon mustard (optional)
  • Salt and black pepper, to taste
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese, plus more for topping
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil salted water in a large pot. Add cauliflower florets and cook for 5-6 minutes until tender but firm. Drain well.
  3. In a saucepan, melt butter over medium heat, whisk in flour, and cook for 1 minute. Gradually add warmed milk while whisking until thickened (about 4–5 minutes). Stir in mustard, nutmeg, salt, pepper, cheddar, and Parmesan until smooth.
  4. Place cooked cauliflower in a baking dish and pour the cheese sauce over it. Top with extra cheddar.
  5. Bake for 20–25 minutes until golden and bubbly. For an extra crispy top, broil for an additional 2–3 minutes.
