  • 1/4 teaspoon allspice
  • 1/4 cup butter (softened)
  • 1/3 cup brown sugar (packed)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • 1/3 cup + 1 tablespoon milk
  • (9-inch) store-bought pumpkin pie (premade/store-bought)
  • 12 ounces unsalted butter (softened, 3 sticks)
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 34 tablespoons heavy whipping cream

Instructions

  1. Preheat your oven to 325°F (165°C). Prepare the cinnamon cheesecake layer by mixing softened cream cheese and granulated sugar until smooth, then add flour, vanilla extract, ground cinnamon, heavy whipping cream, and eggs. Pour into a greased springform pan and bake for about 50 minutes or until set. Let cool completely.
  2. For the spice cake layer, whisk together flour, baking powder, and spices in one bowl. In another bowl, beat softened butter with brown sugar until fluffy; add vegetable oil, vanilla extract, and eggs. Combine wet and dry ingredients alternately with milk. Bake at 350°F (175°C) for 25-30 minutes until a toothpick comes out clean.
  3. Assemble by placing a store-bought pumpkin pie on a serving plate as the base layer, followed by the cooled spice cake layer and then the cheesecake layer on top.
  4. For frosting, beat softened butter with powdered sugar, adding vanilla extract and cream until desired consistency is reached. Frost the assembled piecaken as desired.
