  • ½ pound turkey strips
  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear
  • 1 lemon
  • ½ cup parsley
  • Black pepper to taste

Instructions

  1. Prep the pear by peeling, slicing, and dicing it. Toss with lemon juice in a bowl.
  2. In a skillet over medium heat, cook turkey strips until golden brown (5-7 minutes). Transfer to a paper towel-lined plate.
  3. In the same skillet, sauté shallots for about one minute until softened. Stir in Dijon mustard.
  4. Add frozen peas and pear to the skillet; cook for about five minutes until warmed through.
  5. Turn off heat, fold in half of the turkey strips and chopped parsley. Season with black pepper.
  6. Serve in a large bowl, garnished with remaining turkey strips and lemon zest.
