  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped; optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water (+ more as needed)
  • 2 tablespoons masa harina (corn flour, for thickening if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Toast the dried peppers in a dry pan until fragrant, about 1-2 minutes per side. Let cool.
  2. Remove seeds and stems from the cooled peppers and soak them in hot water for 20 minutes.
  3. Blend the soaked peppers with some soaking water and salt until smooth to create a chili paste.
  4. Toss beef chunks with cumin, salt, and pepper in a bowl.
  5. Heat olive oil in a large pot over medium-high heat and sear the seasoned beef until browned on all sides, about 6-7 minutes.
  6. Sauté onions, jalapenos, and optional serranos in the same pot for about five minutes until soft.
  7. Add garlic and cook for an additional minute until fragrant.
  8. Return beef to the pot along with the chili paste; stir well for 2-3 minutes.
  9. Pour in beef stock, add masa harina, and bring to a boil before reducing heat to low; cover and simmer for about two hours or until beef is tender.
