  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated fresh Parmesan cheese
  • 12 oz penne pasta
  • 8 oz fresh mozzarella cheese, cubed
  • Salt & pepper to taste
  • 2 tbsp extra virgin olive oil
  • 1 tsp Italian seasoning

Instructions

  1. Prepare all ingredients: chop sun-dried tomatoes and mince garlic.
  2. In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper; cook until golden brown (6-7 minutes per side). Remove from skillet.
  3. Sauté garlic in the same skillet for about 1 minute until fragrant; stir in chopped sun-dried tomatoes.
  4. Pour in heavy cream; let simmer for 3-4 minutes until thickened.
  5. Toss cooked penne pasta and cubed mozzarella into the sauce until well coated.
  6. Slice chicken and serve on top of the pasta; garnish with freshly grated Parmesan.
