  • 1 cup butter (2 sticks)
  • 1 large onion (3.5 cups chopped)
  • 2 cups celery (1/4 inch diced)
  • 1/3 cup fresh parsley (chopped)
  • 1/4 cup fresh sage (chopped)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 cups chicken or turkey broth
  • 2 large eggs

Instructions

  1. Preheat your oven to 250°F. Tear or cut bread into bite-sized pieces and bake on a dry pan for about one hour until toasted.
  2. In a skillet over medium heat, melt the butter. Add chopped onions and celery; sauté for 7–10 minutes until soft but not browned.
  3. Combine toasted bread with sautéed vegetables in a large bowl. Add chopped herbs, salt, and pepper; mix well.
  4. In another bowl, whisk together broth and eggs. Pour over the bread mixture while gently mixing until moist but not soggy.
  5. Transfer to a greased baking dish and cover with foil. Bake at 350°F for 40 minutes, then uncover and bake an additional 25–35 minutes until golden brown.
