  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat oven to 375°F (190°C). Rinse and pat dry the Cornish game hens.
  2. In a bowl, mix olive oil, salt, pepper, garlic powder, thyme, and paprika. Rub this mixture inside and out of each hen.
  3. Sauté onion in olive oil until translucent; add celery and carrots until softened. Combine with bread crumbs, chicken broth, and optional ingredients in a bowl.
  4. Stuff each hen with the mixture. Place stuffed hens in a roasting pan breast-side up and baste with white grape or apple juice.
  5. Roast for approximately 1 hour and 10 minutes or until internal temperature reaches 165°F (75°C). Baste every 20-30 minutes.
  6. Let rest for 10 minutes before serving.
