  • 1 1/2 cups English cucumbers (sliced)
  • 2 cups rotisserie chicken (chopped)
  • 15.25 oz canned sweet corn (drained)
  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 lime (juiced and zested)
  • 1 clove garlic (finely minced or grated)
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked pepper
  • 3 green onions (sliced)
  • 1 jalapeno (seeded and diced)
  • 1/4 red onion (diced)
  • 1/2 red bell pepper (seeded and diced)

Instructions

  1. Lay cucumber slices on paper towels to absorb excess moisture.
  2. In a medium bowl, whisk together Greek yogurt, mayonnaise, garlic, lime juice and zest, chili powder, paprika, cumin, salt, and pepper until smooth.
  3. In a large bowl, combine cucumbers, corn, chicken, green onions, jalapeño, red onion, and red bell pepper.
  4. Pour most of the dressing over the salad mixture; gently mix until well coated. Adjust dressing to taste.
  5. Chill for at least 30 minutes before serving for enhanced flavor.
