  • ½ cup unsalted butter (softened)

  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In another bowl, cream softened butter and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon juice, zest, and vanilla extract.
  5. Gently fold in the dry ingredients until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
  8. Cool for 10 minutes in the pan before transferring to wire racks and glazing with powdered sugar.
