Instructions

  1. Pound chicken breasts to an even thickness; rub with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Grill chicken on medium-high heat for about 4–5 minutes per side until cooked through; add cheese to melt in the last minute.
  3. Mix mayonnaise, adobo sauce, and lime juice in a bowl for the chipotle mayo.
  4. Toast brioche buns until golden brown.
