Ingredients

Scale
  • 8 mini or Persian cucumbers
  • 1 green onion, finely sliced
  • Sesame seeds
  • 1.5 tbsp low-sodium soy sauce (or tamari/coconut aminos)
  • 1.5 tbsp rice vinegar (or white apple vinegar)
  • 1 tsp sesame oil
  • 1 tbsp honey (or maple syrup)
  • 2 large garlic cloves, minced
  • 1 tsp crushed red chili flakes

Instructions

  1. Prepare the cucumbers by washing and drying them. Cut off both ends and slice diagonally into thin pieces for a spiral effect, or use a mandolin for convenience.
  2. In a small bowl, whisk together soy sauce, vinegar, sesame oil, honey, garlic, and chili flakes until smooth.
  3. Combine the cucumbers with the dressing in a large mixing bowl. Gently mix to coat without breaking the cucumbers.
  4. Garnish with sliced green onions and sprinkle sesame seeds on top before serving. For enhanced flavor, chill in the fridge for about 30 minutes.
