  • 4 large organic sweet potatoes
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Cook the sweet potatoes by boiling or steaming until tender. Drain well.
  2. In a large bowl, mash the cooked sweet potatoes, adding olive oil, almond milk, vanilla extract, cinnamon, nutmeg, butter cubes, brown sugar, and maple syrup until smooth.
  3. For the topping, mix vegan marshmallows with cinnamon, nutmeg, allspice, soaked raisins, raw pecans, and more maple syrup.
  4. Spread the mashed sweet potato mixture in a greased baking dish and evenly distribute the topping.
  5. Bake at 350°F (175°C) for about 90 minutes or until heated through and golden brown.
