  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • Salt and black pepper, to taste
  • 1/4 cup dry white apple vinegar (optional)
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet over medium heat, melt butter and olive oil. Add diced onion and sauté until softened (about 5 minutes).
  3. Stir in garlic and mushrooms; cook until browned and moisture evaporates (about 8 minutes). Season with thyme, salt, and pepper.
  4. Mix in apple vinegar if using. Remove from heat and blend in cream cheese and Parmesan until smooth. Add Gruyère and one beaten egg; mix well.
  5. Unroll the puff pastry on a clean surface; cut diagonal strips along the sides while leaving the center intact for filling.
  6. Spread the creamy mixture down the center of the pastry; fold in strips alternately to create a braid.
  7. Transfer to the baking tray; brush with remaining beaten egg for color.
  8. Bake for 20–22 minutes or until golden brown.
