Marinate the turkey by placing it in a resealable bag or dish; pour the garlic butter mixture over it and season with salt and pepper. Refrigerate for at least 30 minutes or overnight.
Preheat the oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium-high heat. Sear the marinated turkey on all sides until golden brown (about 3-4 minutes per side).
Pour any remaining marinade over the turkey and roast in the oven for about 25-30 minutes or until the internal temperature reaches 165°F (74°C).
Let rest for 5-10 minutes before slicing and serve garnished with fresh parsley.
