  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box of corn muffin mix (8.5 ounces)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grate the zucchini and drain excess moisture.
  3. In a skillet, sauté the chopped onion and jalapeño until softened.
  4. In a bowl, mix drained zucchini, sautéed veggies, half of the cheddar cheese, corn kernels, eggs, garlic powder, cumin, salt, pepper, and corn muffin mix until combined.
  5. Pour into a greased baking dish and top with remaining cheese.
  6. Bake for about 50 minutes or until golden brown on top.
