  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined.
  2. Form the mixture into small meatballs (about 1 inch in diameter).
  3. Heat olive oil in a large pot over medium heat; brown meatballs for about 5 minutes on each side until golden.
  4. Sauté chopped onions in the same pot until translucent (3-4 minutes).
  5. Pour in chicken broth and bring to a boil; reduce heat to simmer.
  6. Add browned meatballs back into the pot and simmer for about 15 minutes.
  7. Stir in heavy cream and fresh spinach; cook until spinach wilts (about 2 minutes).
