  • ½ pound ground turkey sausage
  • 3 cups kale (chopped)
  • ½ large onion (diced)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut each acorn squash in half and scoop out the seeds. Place cut side down on a lined baking sheet and roast for about 20 minutes until fork-tender.
  3. In a skillet over medium heat, cook ground turkey sausage until browned; set aside.
  4. Sauté onions in the same skillet until softened. Add kale, garlic, celery, apples, and herbs; cook for a few minutes until everything is combined.
  5. Scoop some flesh from the roasted squash and mix it into the filling. Adjust seasoning as needed.
  6. Fill each squash half with the mixture and return to the oven for an additional 15 minutes.
