  • 1 pound chicken sausage (mild or hot)
  • 5 tablespoons unsalted butter (divided)
  • 1 tablespoon olive oil
  • 21/4 cups mirepoix (or 3/4 cup each: diced carrots, celery, and yellow onion)
  • 1 teaspoon minced garlic
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups freshly shredded extra-sharp cheddar cheese

Instructions

  1. Brown the chicken sausage in a large pot over medium-high heat until deeply browned. Remove and set aside.
  2. In the same pot, melt 1 tablespoon of butter and sauté mirepoix for about 5–7 minutes. Add garlic towards the end.
  3. Stir in baby potatoes, dried herbs, salt, and pepper; add chicken stock and bring to a boil. Cover and simmer for 15–20 minutes until potatoes are tender.
  4. In a separate pot, melt remaining butter over medium heat; whisk in flour and cook for 1 minute. Gradually add milk while whisking until thickened.
  5. Combine the creamy mixture into the soup base off heat, then stir in cheese and reserved sausage. Adjust seasoning to taste.
  6. Serve warm with optional garnishes like chopped green onions or crumbled crackers.
