  • ⅔ cup light brown sugar
  • 3 large eggs
  • ⅔ cup vegetable oil
  • 1 cup sour cream
  • ¾ cup cocoa powder
  • 8 oz cream cheese
  • Dark chocolate (for frosting)
  • Sea salt (for garnish)
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • ⅓ cup buttermilk (made with whole milk and vinegar)
  • 2 tsp instant coffee
  • ¾ cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two round cake pans.
  2. In a mixing bowl, combine sifted flour, baking powder, baking soda, sugars, and salt. Mix well.
  3. Add eggs, vegetable oil, buttermilk, sour cream, cocoa powder, instant coffee, and boiling water. Mix until smooth.
  4. Pour the batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  5. For the frosting: Melt dark chocolate and beat together cream cheese with cocoa powder and powdered sugar until creamy. Fold in whipped heavy cream.
  6. Assemble by layering the cakes with salted caramel sauce and frosting. Decorate as desired.
