  • 9 Roma tomatoes
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion
  • 4 garlic cloves
  • 1 tbsp fresh thyme
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 28 oz. can San Marzano tomatoes
  • 1 cup fresh basil
  • 1 tbsp sugar
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C). Slice Roma tomatoes lengthwise and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for about an hour until caramelized.
  2. In a large pot over medium heat, melt 2 tablespoons of butter or additional olive oil. Sauté diced onion for 5 minutes until soft. Add minced garlic and thyme; sauté for another minute.
  3. Stir in the crushed tomatoes, roasted tomatoes, chopped basil, and sugar. Let it simmer for 10 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Return to low heat and stir in heavy cream until combined.
  6. Optional: Prepare mini croutons by tossing bread cubes with olive oil, garlic, and basil; bake at 400°F (200°C) until golden brown.
  7. Serve hot, garnished with croutons and extra basil.
