  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic, cut the top off
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by wrapping it in foil with olive oil and salt; bake for about 30 minutes.
  3. Grease a baking dish with butter.
  4. Thinly slice the potatoes and layer them in the greased dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; stir until well combined.
  6. Squeeze out roasted garlic cloves into a bowl and mash; mix into the creamy mixture.
  7. Pour over potato layers ensuring even coverage.
  8. Cover with foil and bake for 40 minutes.
  9. Remove foil, sprinkle remaining cheese on top, then bake uncovered for another 30 minutes until golden.
