  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup (40g) grated parmesan cheese, divided
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top of the head, wrapping it in foil with olive oil and salt, and baking for about 30 minutes.
  3. Grease a 9×13-inch baking dish with butter.
  4. Thinly slice the potatoes and layer them upright in the greased dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; stir gently until combined.
  6. Squeeze roasted garlic from skins into a bowl and mash into a paste; mix into the creamy mixture.
  7. Pour the creamy sauce over the potatoes evenly and cover with foil.
  8. Bake covered for about 40 minutes; then uncover and sprinkle remaining cheese on top before baking for an additional 30 minutes until golden brown.
  9. Allow cooling slightly before serving and garnish with fresh chives.
