  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and spread halved cherries on it. Sprinkle sugar over cherries and roast for about 10 minutes.
  2. Lower oven temperature to 325°F. Prepare an 8×8 baking pan by spraying with non-stick spray and lining with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In a mixing bowl, beat sugar, eggs, and egg yolk on high speed until fluffy (about 5 minutes).
  5. Combine melted butter, oil, and vanilla extract into the egg mixture on low speed until blended.
  6. Fold dry ingredients into wet ingredients gently until just combined.
  7. Add half of the roasted cherries and chocolate chips; fold until mixed.
  8. Pour batter into the prepared pan and bake for about 40-50 minutes until edges are set but center is slightly underdone.
  9. Let cool completely before cutting into squares.
