  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • Fresh cracked pepper
  • Shaved Parmesan
  • Fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onions with salt and pepper until translucent, about 3-4 minutes.
  3. Add minced garlic and Italian seasoning; sauté for 30 seconds.
  4. Stir in ground turkey, cooking until browned.
  5. Add chicken broth, crushed tomatoes, and ravioli; season and bring to a simmer.
  6. Cook on low heat for 3-5 minutes until ravioli is al dente.
  7. Stir in spinach and heavy cream until warmed through.
  8. Season to taste and garnish with fresh parsley before serving.
