  • 1 cup brown sugar
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 1 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk, at room temperature

Instructions

  1. Prepare the streusel topping by mixing cold unsalted butter, brown sugar, flour, and salt until crumbly.
  2. In a separate bowl, combine flour, baking soda, salt, and pumpkin pie spice.
  3. In a large bowl, beat melted butter with granulated sugar, eggs, vanilla extract, pumpkin puree, and buttermilk until well combined.
  4. Gently fold dry ingredients into the wet mixture until just combined; lumpy batter is fine.
  5. Fill muffin tins three-quarters full with batter and top with streusel.
  6. Bake at 350°F (175°C) for about 20 minutes or until a toothpick comes out clean.
