  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice mix
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 175°C (350°F). Lightly grease and flour a small springform pan.
  2. In a mixing bowl, beat the eggs with the brown sugar until fluffy and creamy. Stir in coconut oil, pumpkin puree, vanilla extract, and optional maple syrup until well combined.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Fold the dry ingredients into the wet mixture until just combined.
  4. Pour batter into the prepared pan and bake for approximately 25 minutes; then cover with foil and bake for an additional 20 minutes. Use a toothpick to check doneness; it should come out clean.
  5. Allow cooling before preparing the glaze by mixing powdered sugar with milk and maple syrup until smooth.
  6. Once cooled, drizzle or spread the glaze over the kuchen.
