  • Cold oat milk, to taste

  1. In a small saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water. Simmer on low heat for about 2-3 minutes until slightly thickened.
  2. Remove from heat and stir in vanilla extract. Strain if desired for a smoother texture.
  3. In a sealable jar, combine one double shot of espresso with 1-2 tablespoons of the syrup and ice cubes. Shake vigorously for 20-30 seconds.
  4. Pour into a glass, add fresh ice, then top with cold oat milk as desired. Dust with extra pumpkin pie spice if preferred.
