  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips
  • Mini vegan marshmallows
  • Graham crackers (crushed)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together room-temperature butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet about 2 inches apart.
  8. Press extra marshmallows and chocolate chips on top before baking.
  9. Bake for 12 to 14 minutes until edges are golden; cool slightly before transferring to a wire rack.
