  • 1 cup all-purpose flour
  • 1/4 cup coconut oil
  • 1/4 tsp salt
  • 4 tbsp ice cold water
  • Granulated sugar and cinnamon for dusting (optional)
  • 1/2 cup organic shortening or vegan butter (you can also use regular butter)
  • 3/4 cup + 2 tbsp confectioners sugar
  • Seeds from 1/4 vanilla bean (or gf vanilla)
  • Pinch of salt
  • Dash of non-dairy milk
  • 1 tbsp pumpkin puree
  • 1 cup confectioners sugar
  • 2 tsp pumpkin pie spice
  • 1/2 tsp vanilla
  • Pinch of salt

Instructions

  1. Clean your mixing bowl and whisk with vinegar to ensure no residue remains.
  2. Measure all ingredients accurately using a kitchen scale.
  3. Combine almond meal and powdered sugar; sift once to remove lumps.
  4. Heat granulated sugar and water until it reaches 248°F while whipping egg whites to soft peaks.
  5. Gently fold the meringue into the almond mixture until smooth while avoiding over-mixing.
  6. Pipe 1½ inch rounds onto lined baking sheets and let rest until dry to touch.
  7. Bake in a preheated oven until shells form feet; cool completely before removing from parchment.
  8. Prepare frosting by mixing shortening (or butter), powdered sugar, pumpkin puree, spices, and salt until fluffy.
  9. Assemble by piping frosting onto one shell and topping with another shell.
