  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda

  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining with parchment paper.
  2. In a large bowl, mix together flour, rolled oats, brown sugar, baking soda, and salt. Stir in melted butter until fully combined.
  3. Press half of the crumble mixture into the bottom of the prepared dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble mixture on top of the filling along with optional walnuts for added crunch.
  7. Bake for 30-35 minutes until golden brown on top and set in the center.
  8. Allow to cool completely before slicing into squares for serving.
