  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika (plus more for dusting)
  • Optional: A dash of orange food coloring
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Place eggs in a saucepan, cover with cold water, and bring to a boil. Remove from heat and let sit covered for 10 minutes.
  2. Transfer eggs to an ice bath for at least 5 minutes.
  3. Gently crack and peel the cooled eggs under running water.
  4. Halve the eggs lengthwise and scoop out yolks into a bowl.
  5. Mix yolks with mayonnaise, mustard, salt, pepper, paprika, and food coloring until smooth.
  6. Pipe filling into egg whites and create pumpkin ridges using a knife or toothpick.
  7. Insert chive pieces as stems and dust with paprika before chilling in the refrigerator for at least 30 minutes.
