  • ¼ cup granulated sugar
  • 4 large eggs (divided)
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • Pinch cloves
  • Pinch coarse kosher salt
  • 1 (15 ounce) can pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your spelt pie crust according to package instructions or homemade directions, pricking the bottom with a fork to prevent bubbling. Pre-bake until lightly golden.
  2. In a large bowl, blend the mascarpone cheese and granulated sugar. Add two eggs and mix until smooth.
  3. Stir in vanilla extract, light brown sugar, cinnamon, nutmeg, cloves, kosher salt, and pumpkin puree until well combined.
  4. Pour the filling into the pre-baked crust and smooth the top. Bake for about 1 hour and 15 minutes or until set; check with a toothpick in the center.
  5. Allow to cool at room temperature before slicing and serving.
