  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the pumpkin by peeling and dicing it into bite-sized cubes.
  3. Cook the gnocchi according to package instructions in boiling salted water until they float. Drain and set aside.
  4. In a skillet over medium heat, sauté sage leaves until crispy.
  5. In a large bowl, combine cooked gnocchi, pumpkin cubes, sautéed sage, vegetable stock, cream, blue cheese (or goat's cheese), and half of the mozzarella (or cheddar). Mix well.
  6. Transfer to a baking dish and top with remaining cheese and chopped pecans.
  7. Bake for 25-30 minutes until golden and bubbly.
