  • 4 mini pumpkins or ramekins
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Prepare mini pumpkins by cutting off the tops and scooping out seeds, or use ramekins.
  2. In a saucepan, heat heavy cream over medium heat until warm.
  3. In a bowl, whisk together egg yolks and granulated sugar until pale. Gradually add the warm cream while whisking.
  4. Stir in pumpkin puree, vanilla, cinnamon, ginger, and salt until well combined.
  5. Pour mixture into prepared pumpkins or ramekins and place in a baking dish filled with hot water. Bake at 325°F (160°C) for about 30 minutes or until just set.
  6. Cool and refrigerate for at least two hours. Before serving, sprinkle sugar on top and caramelize with a kitchen torch.
