  • 1 teaspoon pumpkin pie spice (for streusel)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons unsweetened soy milk (for glaze)
  • 1/2 teaspoon pure vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F.
  2. In one bowl, whisk together dry ingredients: flour, baking powder, pumpkin pie spice, salt, and sugar.
  3. In another bowl, combine wet ingredients: pumpkin puree, oil, soy milk, and vanilla until smooth.
  4. Mix wet and dry ingredients until just combined.
