Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, whisk together the eggs, pumpkin puree, granulated sugar, brown sugar, and vegetable oil until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; avoid overmixing.
  5. Fold in the chocolate chips carefully.
  6. Spoon the batter into the prepared muffin tin and bake for about 16 minutes or until a toothpick inserted comes out clean.
