  • 4 ounces cream cheese, softened

  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/3 cup white chocolate chips
  • Granulated sugar (for rolling)
  • Chocolate chips (for topping)

Instructions

  1. In a skillet over medium heat, combine butter, cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir continuously until thickened.
  2. Mix in graham cracker crumbs and white chocolate chips until smooth. Add food coloring if desired.
  3. Pour the mixture into a greased baking sheet, spread evenly, and refrigerate until firm (about 2 hours).
  4. Once firm, roll into small balls using buttered hands.
  5. Roll each ball in granulated sugar for coating.
  6. Use a toothpick to create ridges on each truffle and top with mini chocolate chips.
