Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ¼ tsp ground cardamom
  • ½ tsp salt
  • ½ cup canola oil
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 1¼ cups canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz cream cheese, room temperature
  • 4 tbsp unsalted butter, room temperature
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking soda, spices, and salt.
  3. In another bowl, mix canola oil, granulated sugar, brown sugar, eggs, pumpkin puree, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Pour batter into a greased 9×5 loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. While your bread cools, beat together room temperature cream cheese and butter until smooth.
  7. Add powdered sugar and vanilla extract gradually while mixing until creamy. If it’s too thick, add milk one teaspoon at a time until you reach your desired consistency.
  8. Once cooled completely, frost the pumpkin bread generously and slice to serve.
