  • 4 pounds boneless beef shoulder
  • 1 large yellow onion
  • 1 can ginger beef broth (12 ounces)
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. Place the trimmed beef shoulder in a slow cooker or Instant Pot. Add sliced onions and pour in ginger beef broth.
  2. Cook on low for about 5 hours in a slow cooker or 90 minutes in an Instant Pot until the beef is fall-apart tender.
  3. While the beef cooks, boil salted water and cook elbow macaroni until al dente; drain and set aside.
  4. In a saucepan, melt butter over medium heat, whisk in flour, gradually add warmed milk while stirring until thickened, then mix in shredded cheddar until creamy.
  5. Shred the cooked beef with two forks, then combine it with the macaroni and cheese sauce.
  6. Serve warm with an extra drizzle of BBQ sauce if desired.
