  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, cream together softened unsalted butter and granulated sugar until light and fluffy. Mix in an egg and vanilla extract until well combined.
  3. In a separate bowl, whisk all-purpose flour, baking powder, and salt. Gradually mix this dry blend into the butter mixture until just combined.
  4. Press the dough into the prepared pan and bake for 12-15 minutes or until lightly golden around the edges. Allow cooling completely.
  5. In another bowl, whisk instant pistachio pudding mix with milk and heavy cream until thickened. Spread this over the cooled cookie base.
