  • 1 egg (room temperature)
  • 1 cup white chocolate chips
  • ½ cup chopped pistachios

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, pudding mix, baking soda, and salt.
  3. In another bowl, cream together the brown sugar, granulated sugar, and softened butter until light and fluffy.
  4. Add egg and vanilla extract to the creamed mixture; beat until combined.
  5. Gradually mix in the dry ingredients until just combined; fold in white chocolate chips and chopped pistachios.
  6. Chill dough for at least 30 minutes.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
