  • 2/3 cup brown sugar
  • 1/3 cup honey
  • 2 large eggs
  • 1/3 cup milk (any kind)
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix vegetable oil, peanut butter, brown sugar, honey, eggs, milk, and vanilla until combined. Pour into dry ingredients and stir gently until just mixed.
  4. Fold in shredded zucchini and chocolate chips.
  5. Spread batter in the prepared loaf pan and bake for about 55–70 minutes or until a toothpick comes out clean.
  6. Let cool in the pan for about an hour before slicing.
