  • 1/2 cup unsalted butter, melted and cooled
  • 4 blocks cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream, at room temperature
  • 2 teaspoons pure vanilla extract
  • 4 large eggs, at room temperature
  • 5 medium peaches
  • 4 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven and slice four medium peaches, tossing them with granulated sugar and cinnamon.
  2. Combine flour, brown sugar, cinnamon, and melted butter in a bowl for the streusel topping until crumbly.
  3. Mix graham cracker crumbs with sugar, cinnamon, and melted butter; press into the bottom of a springform pan.
  4. Beat cream cheese until smooth; gradually add remaining filling ingredients until well combined.
  5. Layer half of the cheesecake filling over the crust followed by half of the roasted peaches; repeat layers and top with streusel.
  6. Bake until set but slightly wobbly in the center; cool completely before chilling in the refrigerator.
