  • 1 whole chicken (35 lbs, giblets removed)
  • 1 medium onion (peeled and halved)
  • 2 tablespoons avocado oil (or olive oil)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 425ºF (218ºC). Let the chicken rest at room temperature while the oven heats.
  2. Line your baking dish with parchment paper. Pat the chicken dry with paper towels and place it breast side up in the pan.
  3. Stuff the cavity with halved onions and optional garlic cloves or lemon slices for added flavor.
  4. In a bowl, mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper into a paste.
  5. Coat the chicken evenly with the seasoning paste using your hands or a brush.
  6. Roast in the oven for 70-90 minutes until the internal temperature reaches at least 165ºF (74ºC). Baste if desired, but avoid basting in the last 20 minutes.
  7. Let the chicken rest for about five minutes before carving.
