  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup heavy cream
  • 1/4 cup strong brewed coffee
  • 4 oz dark chocolate (70% cacao)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan.
  2. Mix almond flour and cocoa powder in a bowl.
  3. Beat egg whites until soft peaks form, then gradually add sugar until stiff peaks develop.
  4. Fold the whipped egg whites into the almond mixture gently.
  5. Pour batter into the prepared pan and bake for 15-20 minutes; allow to cool completely.
  6. For ganache, heat heavy cream until simmering, pour over chopped dark chocolate, and stir until smooth.
  7. Make buttercream by beating softened butter with powdered sugar and brewed coffee.
  8. Slice cooled sponge into three layers, soak with coffee syrup, layer with buttercream and ganache, and assemble.
